On demand. Emphasis on human needs and food sources of vitamins and minerals during health and disease conditions. Identification and discussion of the chemical and physical properties of these micronutrients in foods and human systems. Prerequisite: Admission to Master’s of Food and Nutrition or Food and Nutrition Graduate Certificate. Repeatable for a maximum of 3 credit hours. Approved for distance education.
